There are two main aspects to consider:
frequency: room temperature is much more frequent than ambient temperature in a specialised corpus;
co-textual hints: room temperature collocates with verbs (enjoy, serve) used in the imperative, while ambient temperature doesn't. The co-text of room temperature is thus more similar to that of temperatura ambiente.
